Ingredients
3 free-range egg whites
2 tbsp icing sugar
½ pineapple, hollowed out
100g pineapple flesh, cubed
1 orange, peeled and chopped
1 tbsp white wine
To garnish
fresh mint leaves

Method
1. Preheat the oven 200C/400F/Gas 6.
2. Whisk the egg whites to stiff peaks in a bowl.
3. Add the icing sugar to the whites and whisk again.
4. Fill the pineapple half with the cubed pineapple, orange and white wine.
5. Spoon or pipe the meringue mix on top and place into a hot oven for 10-12 minutes, or until the meringue is set and beginning to brown.
6. To serve, dust with icing sugar and garnish with fresh mint.
