Ingredients
50g/2oz double cream, whipped
50g/2oz ready-made lemon curd
25g/1oz strawberries, thinly sliced
25g/1oz cantuccini biscuits, crushed
25g/1oz flaked almonds, toasted
mint leaf, to garnish
Method
1. In a small bowl mix together the whipped cream and lemon curd.
2. Layer a glass with the strawberries, biscuits and almonds. Spoon in the lemon curd and cream mixture and garnish with the mint sprig.
