Ingredients
2 spring roll wrappers
4 tbsp caster sugar
4 tbsp water
1 lime, zest and juice
To serve
2 tbsp Greek-style yoghurt
2 golden kiwi fruit, skin removed, flesh sliced
icing sugar, for dredging
Method
1. Preheat the oven to 180C/350F/Gas 4.
2. Mould the spring roll wrappers into the wells of a muffin tin. Bake in the oven for 2-3 minutes, or until crisp.
3. Heat the sugar and water in a small pan over a low heat until the sugar has dissolved and is bubbling.
4. Add the lime zest and juice and stir well, then remove from the heat.
5. To serve, place the spring roll wrapper baskets into the centre of a serving plate. Spoon the yoghurt into them. Arrange the kiwi fruit slices around the spring roll wrapper baskets and drizzle with the syrup. Dust with icing sugar.
