Ingredients
1 tsp olive oil
1 shallot, chopped
1 apple, diced
1 tbsp butternut squash, finely diced
1 tbsp red cabbage, finely chopped
2 tbsp red wine vinegar
1 tbsp soy sauce
1 tbsp Guinness or other stout
1 tbsp brown sugar
Method
1. Heat the olive oil in a pan, add the shallots and gently sauté for 1-2 minutes, until starting to soften.
2. Add the apple, butternut squash and cabbage and sauté for 4-5 minutes.
3. Pour in the red wine vinegar, soy sauce and Guinness or stout and bring to the boil. Reduce to a gentle simmer and add the brown sugar. Cook for a further ten minutes and serve in a warm bowl.
