Field mushrooms in a saffron and walnut pasta sauce

Ingredients

350g/12oz field mushrooms, sliced
2 onions, finely chopped
55g/2oz walnuts - coarse chopped
30g/1oz butter
1 glass white wine (approximately 125ml/4fl oz)
pinch saffron threads
150ml/¼ pint creme fraiche
salt and freshly ground black pepper

Method

1. Sweat onion in butter. Add mushrooms, saffron and white wine. Simmer 2-5 minutes, season.
2. Add walnuts and creme fraiche. Bubble for a further couple of minutes to reduce slightly.
3. Serve on your favourite pasta.
