Ingredients
8 anchovy fillets in oil, drained
2 tbsp unsalted butter, softened
4 large eggs
4 thick slices of white bread, toasted
freshly ground black pepper
cress to serve
Method
1. Chop the anchovies, mix into the softened butter and season with pepper.
2. Boil the eggs for 3-4 minutes, until softly set. Put the bread in the toaster, then spread with anchovy butter, cut into soldiers and garnish with cress.
3. Serve.
