Chilli pecan mango

Ingredients

25g/1oz butter
½ ripe mango, peeled, stone removed, cut into thick slices
1 tbsp maple syrup
pinch chilli flakes
small handful pecan nuts

Method

1. Heat a griddle pan until smoking hot.
2. Melt the butter in a small pan over a medium heat (or in the microwave), then brush the mango slices with the melted butter.
3. Drizzle the buttered mango with the maple syrup, then place onto the heated griddle pan.
4. Sprinkle over the dried chilli flakes and cook for 1-2 minutes on each side, until lightly caramelised and griddle-marked.
5. Meanwhile, heat a frying pan. Add the pecans and toast for 3-4 minutes, shaking the pan regularly to ensure the nuts cook evenly.
6. To serve, arrange the mango in a fanned shape on a warm plate and sprinkle over the toasted pecans.
