Chilli mango

Ingredients

½ mango
For the syrup
30g/1oz caster sugar
30g/1oz icing sugar
pinch of chilli flakes
For the mousse
150ml/5¼fl oz double cream
30g/1oz icing sugar
pinch of chilli flakes

Method

1. Preheat the oven to 220C/425F/Gas 7.
2. Make criss-cross slits in the mango half and then push up the bottom so that it looks like a fan. Place on a baking tray.
3. To make the syrup, heat the sugar, icing sugar and chilli in a small pan for a few minutes.
4. Pour the syrup over the mango and then bake in the oven for 5-6 minutes, or until golden.
5. For the mousse, whip the cream with the sugar and chilli flakes in a large clean bowl until soft peaks form.
6. Remove the mango from the oven and spoon the mousse alongside to serve.
