Cherry soup with red wine and vanilla

Ingredients

175ml/6fl oz red wine
2 tbsp caster sugar
150g/5½oz canned cherries in syrup
½ vanilla pod, seeds only
fresh mint, to garnish

Method

1. Bring the red wine and sugar to a simmer in a pan. Add the cherries in syrup and vanilla seeds and continue to cook for about 5-7 minutes, or until slightly thickened and reduced.
2. To serve, ladle the soup into a serving bowl and garnish with a sprig of fresh mint.
