Cherry muffins

Ingredients

250g/9oz self-raising flour
1 tsp baking powder
75g/2½oz caster sugar
2 free-range eggs, beaten
50ml/2fl oz melted butter
150g/5½oz canned cherries, drained and stones removed
icing sugar, to dust

Method

1. Preheat the oven to 190C/375F/Gas 5.
2. Place the flour, baking powder, caster sugar, eggs and melted butter into a food processor and blend to make a thick, smooth batter.
3. Line a muffin tray with six muffin cases. Fill each case with equal amounts of the muffin mixture and place 3-4 cherries on top of each muffin.
4. Transfer to the oven and bake for 15-18 minutes, or until risen and slightly golden on top.
5. To serve, place the muffins on a plate and dust with icing sugar.
