Ingredients
For the Yorkshire puddings
3 tbsp vegetable oil
220ml/8fl oz milk
1 free-range egg
150g/5oz plain flour
1 tsp white wine vinegar
For the caramelised oranges
2 tbsp brown sugar
2 tbsp clear honey
2 oranges, peeled, sliced
icing sugar, for dusting
Method
1. Preheat the oven to 180C/350F/Gas 4.
2. For the Yorkshire puddings, pour the oil into two or three of the wells in a muffin tray and heat in the oven until smoking hot.
3. Meanwhile, in a bowl, whisk together the milk and egg until well combined.
4. Gradually add the flour, whisking well after each addition until the milk mixture forms a smooth batter.
5. Add the vinegar and whisk again to combine. Set the batter mixture aside for 5-10 minutes to rest.
6. Divide the batter equally among the two or three wells of the muffin tray and return to the oven. Cook for 5-7 minutes, or until the Yorkshire puddings have risen and are golden-brown.
7. For the caramelised oranges, heat the sugar and honey in a pan over a low heat until the sugar has melted and the mixture is bubbling.
8. Add the orange slices and stir to coat them in the sugar mixture. Cook for 1-2 minutes, or until the oranges are sticky and golden-brown.
9. To serve, place the Yorkshire puddings into the centre of a serving plate. Spoon the caramelised oranges alongside. Dust with icing sugar.
