Ingredients
6 tbsp soft brown sugar
100g/3½oz butter
1 medium pineapple, peeled and sliced into 1cm/½in discs
½ red chilli, finely chopped
1 lime, cut in half
2 tbsp white wine
150ml/¼ pint double cream, lightly whipped, to serve
Method
1. Heat the brown sugar and butter in a frying pan over a medium heat until completely melted and darkened.
2. Add the pineapple, chilli, lime halves, cut-side down, and the white wine. Cook the pineapple in the syrup mixture for 4-5 minutes on each side.
3. To serve, place the pineapple slices onto plates and pour over the syrup. Serve with a dollop of whipped cream.
