Ingredients
2 tbsp caster sugar
2 tbsp orange liqueur
½ lime, juice only
½ coconut, flesh only, grated (the juice can be used in another recipe)
200g/7oz strawberries, hulls removed, cut in half
Method
1. In a bowl, mix together the sugar, orange liqueur and lime juice. Set aside for ten minutes, stirring occasionally, until the sugar is dissolved.
2. When the sugar has dissolved, stir in the grated coconut flesh until well combined.
3. To serve, place a tablespoonful of the coconut mixture into the bottom of four cocktail glasses. Place two strawberry halves into each glass on top of the mixture. Repeat the process with the remaining coconut mixture and remaining strawberries. Hook a strawberry half over the side of each cocktail glass.
