Ingredients
½ potato, peeled, cut into thin chips, blanched and patted dry
2 tbsp olive oil
salt and freshly ground black pepper
1 free-range egg
1 tbsp tomato ketchup
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Heat the oil in a large ovenproof frying pan. Add the potatoes and season, to taste, with salt and freshly ground black pepper.
3. Place the chips in the oven and roast for 15 minutes, or until cooked and golden.
4. Remove from the oven, crack the egg in the middle of the chips and return to the oven. Bake for two minutes, or until the egg is cooked through, then remove.
5. To serve, keep the egg and chips in the frying pan and add the ketchup.
