Vanilla porridge

Ingredients

100g/3½oz oats
1 vanilla pod, seeds removed
200ml/7fl oz milk
50ml double cream
For the caramel sauce
50g/1¾oz butter
50g/1¾oz caster sugar
50ml/1¾fl oz double cream
1 orange, peeled and sliced

Method

1. Place the oats, vanilla seeds, milk and cream in a heavy-bottomed saucepan. Simmer for four minutes until thick.
2. To make the caramel sauce, in a hot pan add the butter and sugar and cook for 3-4 minutes. Next add the cream and orange segments.
3. Serve the vanilla oats with the caramel and oranges.
