Thai-style noodle salad

Ingredients

1 tbsp olive oil
1 red chilli, chopped
1 garlic clove, chopped
2.5cm/1in piece root ginger, peeled and grated
3 small bulbs pak choi, leaves separated
2 tbsp soy sauce
2 tsp sesame oil
½ lime, juice only
150g/5½oz dried egg noodles, cooked according to packet instructions
lime wedges, to garnish

Method

1. Heat the oil in a wok or large frying pan, add the chilli, garlic and ginger and stir fry for one minute.
2. Add the pak choi and stir fry for 1-2 minutes, or until beginning to wilt.
3. Add the soy sauce, sesame oil and lime juice and simmer for 1-2 minutes.
4. Add the cooked noodles and stir well.
5. To serve, place the salad into a serving bowl and garnish with lime wedges.
