Tacos with garlic yoghurt

Ingredients

For the tacos
vegetable oil, for deep frying
2 ready-made tortilla wraps, quartered to make triangle shapes
For the garlic yoghurt
1 garlic clove
1 tbsp chopped fresh coriander
3 tbsp Greek-style yoghurt
pinch chilli powder
salt and freshly ground black pepper

Method

1. For the tacos, place the vegetable oil into a deep, heavy-bottomed saucepan and heat until a small cube of bread sizzles and turns golden when dropped into it. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
2. Carefully place the tortilla pieces into the hot oil and deep fry until golden-brown and crisp. Remove from the oil with a slotted spoon and drain on kitchen paper.
3. For the garlic yoghurt, place all the garlic yoghurt ingredients into a bowl, season with salt and freshly ground black pepper and mix well.
4. To serve, place the tacos onto a plate with a small bowl of garlic yoghurt.
