Ingredients
4 eggs, separated
200g/7¼oz spinach, cooked and puréed until smooth
55g/2oz pine nuts, toasted
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Whisk the egg whites in a clean bowl to form stiff peaks.
3. In a separate bowl, mix the egg yolks with the spinach to combine. Gently fold the egg whites into the spinach mixture.
4. Spoon the mixture into a small hot ovenproof frying pan and sprinkle with the pine nuts.
5. Bake in the oven for 5-6 minutes, or until well risen and golden. Serve.
