Ingredients
2 tbsp olive oil
½ onion, sliced
½ red pepper, sliced
1 handful fresh spinach
4 free-range eggs, beaten
salt and freshly ground black pepper
Method
1. Preheat the oven to 180C/350F/Gas 4.
2. Heat the oil in an ovenproof frying pan, add the onion and pepper and fry for 3-4 minutes, or until softened. Add the spinach and fry for a few seconds until it has wilted.
3. Pour the eggs into the same pan and season, to taste, with salt and freshly ground black pepper. Fry until the edges of the egg begin to set, then transfer the pan to the hot oven for 1-2 minutes, or until the egg has completely set.
4. To serve, slide the frittata out of the pan onto a serving plate and eat immediately.
