Spicy rice noodles with cashew, chilli, soy and spinach

Ingredients

1 tsp olive oil
150g/5½oz flat rice noodles, cooked according to packet instructions
½ red chilli, chopped
55g/2oz cashew nuts, toasted
1 tsp sesame oil
1-2 tbsp soy sauce
small handful spinach leaves, chopped
1 tbsp chopped fresh chives
small handful chopped fresh coriander, plus extra to serve
1 lime, juice only
lime wedges, to serve

Method

1. Heat the olive oil in a wok. Add the cooked rice noodles, chilli, cashew nuts, sesame oil, soy sauce and spinach and fry for 2-3 minutes until heated
through.
2. Stir in the chives, coriander and lime juice, to taste.
3. Spoon into a warm serving bowl and garnish with lime wedges and coriander. Serve.
