Ingredients
1 tbsp olive oil
4 spicy sausages, chopped
½ onion, finely sliced
pinch dried chilli flakes
200g/7oz canned cherry tomatoes
large handful fresh basil, chopped
5 mini mozzarella balls, drained
2 tbsp mixed olives
250g/9oz fresh penne, cooked according to packet instructions
Method
1. Heat the oil in a pan and fry the sausage and onion until golden-brown. Add the chilli flakes.
2. Add the cherry tomatoes, basil, mozzarella and olives and stir over a low heat for 2-3 minutes.
3. Add the cooked pasta to the sauce and stir well. Divide between two bowls and serve.
