Ingredients
150g/5¼oz Greek yoghurt
1 vanilla pod, seeds scraped out
½ can of tinned prunes with juice
½ orange, juice only
sprig fresh mint, to garnish
Method
1. Place the yoghurt with the vanilla seeds into a bowl and mix together well.
2. Place the prunes and juice into a dessert glass.
3. Add the orange juice and spoon over the vanilla yoghurt.
4. Garnish with the sprig of fresh mint and serve.
