Ingredients
dash olive oil
1 shallot, finely chopped
1 garlic clove, finely chopped
½ glass white wine
1 tbsp wholegrain mustard
150ml/¼ pint double cream
2 tbsp chopped fresh chives
125g/4oz tagliatelle, cooked according to packet instructions
To serve
2 tbsp chopped fresh parsley
½ chilli, seeds removed, finely chopped
2 tbsp olive oil
Method
1. Heat the oil in a small saucepan and gently fry the shallot for 4-5 minutes, or until softened. Add the garlic and cook for one minute.
2. Add the wine and simmer until slightly reduced, then add the mustard and cream and cook for 1-2 minutes. Stir in the chives and the cooked tagliatelle and stir well to coat the pasta.
3. To serve, place the parsley, chilli and olive oil into a small bowl and mix well. Place the pasta into a serving dish and drizzle over the oil mixture.
