Ingredients
200g/7oz pasta bows
1 garlic clove
small handful fresh basil leaves
1 tbsp olive oil, plus more for drizzling
50g/2oz olives, stones removed, roughly chopped
1 ball mozzarella, torn into bite-sized pieces
2 baby red peppers from a jar, sliced
Method
1. Bring to the boil a large pan of salted water. Cook the pasta bows in the water, following the instructions on the packet for timing.
2. Blend the garlic, basil and olive oil in a bowl with a hand blender to make a pesto.
3. When the pasta is cooked, drain and allow to cool slightly.
4. To serve, put the pasta in a bowl, add all the other ingredients and mix. Drizzle with olive oil and serve.
