Ingredients
2 tsp soy sauce
3 free-range eggs
1 tbsp olive oil
100g/3½oz shiitake mushrooms, sliced
2 choy sum leaves, roughly chopped
Method
1. Lightly whisk the eggs and soy sauce together in a bowl.
2. Heat the olive oil in a non-stick frying pan and sauté the mushrooms until tender.
3. Stir in the choy sum leaves and cook for one minute, until just wilted.
4. Pour in the egg mixture and cook gently until the base sets, then turn over and cook for a further minute. Serve immediately.
