Ingredients
25g/1oz butter
100g/3½oz spinach
salt and freshly ground black pepper
1 free-range egg
2 tbsp double cream
Method
1. Preheat the oven to 180C/350F/Gas 4.
2. Heat the butter in a frying pan, add the spinach and stir-fry until the spinach is just wilted. Season with salt and freshly ground black pepper and place into a ramekin.
3. Make a small well in the middle of the spinach and carefully crack the egg into the well. Pour over the cream and season well with salt and freshly ground black pepper.
4. Transfer to the oven and bake for 8-10 minutes, or until the egg is set. Serve in the ramekin.
