Description
NB: For this recipe you will need a muffin tray with at least eight wells.
Ingredients
For the Yorkshire puddings
1 free-range egg
85g/3oz plain flour
45ml/1½fl oz whole milk
40ml/1½fl oz water
40ml/1½fl oz vegetable oil
For the mushy peas
1 tbsp vegetable oil
2 shallots, peeled, chopped
50ml/2fl oz white wine
200g/7oz fresh peas, removed from their pods
1 tbsp chopped fresh mint
1 tbsp crème fraîche
salt and freshly ground black pepper
To serve
12 slices ready-made vegetarian black pudding, cooked according to the packet instructions
500ml/17½fl oz hot ready-made gravy
Method
1. For the Yorkshire puddings, preheat the oven to 220C/425F/Gas 7.
2. In a bowl, gently whisk the egg with the flour until well combined.
3. Gradually add the milk, whisking slowly until well combined.
4. Gradually add the water, whisking slowly until the mixture is the consistency of double cream. (NB: You may not need all of the water.)
5. Place a teaspoon of vegetable oil into eight of the wells in the muffin tray. Heat in the oven until the oil is smoking hot.
6. When the oil is smoking, remove the tray from the oven and divide the batter mixture equally among the eight wells. Return the tray to the oven as quickly as possible and cook the Yorkshire puddings for 8-10 minutes, or until risen and pale golden-brown.
7. Meanwhile, for the mushy peas, heat the oil in a pan over a medium heat. Add the chopped shallots and fry for 3-4 minutes, or until softened.
8. Add the wine and simmer the mixture until the volume of liquid has reduced by half.
9. Remove the pan from the heat and add the peas, mint and crème fraîche. Using a stick blender, blend the mixture until it is thick and well combined but has retained some of its texture. Season, to taste, with salt and freshly ground black pepper.
10. To serve, spoon a portion of the mushy peas into the centre of each of six to eight serving plates. Place one of the individual Yorkshire puddings on top of each. Place one or two slices of the vegetarian black pudding into each of the Yorkshire puddings. Drizzle over the gravy.
