Ingredients
1 egg yolk
1 tsp lemon juice
drizzle honey
4 egg whites, whisked to stiff peak stage
icing sugar, to serve
Method
1. Preheat the oven to 230C/446F/Gas 8.
2. Beat together the egg yolk, lemon juice and honey. Fold in the whisked egg whites.
3. Spoon into a medium-sized ramekin and level off the top. Cook in the oven for 6-8 minutes or until risen and golden.
4. Dust with icing sugar and serve at once.
