Ingredients
½ packet gnocchi, cooked
For the pesto
handful of rocket, finely chopped
1 lemon, zest and juice only
5-6 tbsp olive oil
55g/2oz parmesan, finely grated
Method
1. Stir together all the pesto ingredients.
2. Add the gnocchi and stir to coat.
3. Sprinkle over more parmesan and serve.
