Ingredients
50g/2oz rocket
50g/2oz fresh basil leaves
1 garlic clove
50g/2oz pine nuts
50ml/2floz olive oil
½ tsp white wine vinegar
125g/4oz gnocchi, cooked according to packet instructions
salt and freshly ground black pepper
Method
1. Place the rocket, basil, garlic and pine nuts into a food processor and blend to a course paste.
2. Place the olive oil and vinegar into a bowl. Add the rocket mixture and stir together.
3. Add the cooked gnocchi, season, to taste, with salt and freshly ground black pepper and mix together.
4. Serve in a bowl.
