Ingredients
30g/1¼oz fresh root ginger, grated
100g/3½oz double cream, whipped
small handful fresh mint, chopped
2 tbsp icing sugar
1 lime, juice only
Method
1. In a bowl, add the ginger to the cream and mint.
2. In a separate bowl, mix together the lime and icing sugar and then combine with the ginger cream.
3. Serve in a tall glass.
