Eggs en cocotte with sweet potato, spring onion and cayenne pepper

Ingredients

½ sweet potato, peeled and cut into cubes
2 tbsp fresh peas, out of their pods
butter, for greasing
2 slices Serrano ham, chopped
2 spring onions, chopped
4 free-range eggs
2 tbsp double cream
To serve
pinch cayenne pepper
freshly ground black pepper

Method

1. Preheat the oven to 180C/350F/Gas 4.
2. Blanch the sweet potato in boiling water for about five minutes, and the peas for about three minutes. Drain.
3. Grease two ramekin dishes well with butter. Divide the sweet potato and peas between the two dishes, then sprinkle over the ham and spring onions. Crack two eggs on top of each dish, then drizzle the cream on top of the eggs.
4. Place the ramekins onto a baking sheet and cook in the oven for about six minutes, until the eggs are just set.
5. To serve, sprinkle the eggs with cayenne pepper and freshly ground black pepper.
