Ingredients
oil for deep-frying
½ bag spinach, wilted in a hot saucepan
100g/3½oz ricotta
50g/1¾oz parmesan, grated
1 clove garlic, crushed
pinch grated nutmeg
6 wonton wrappers
1 free-range egg yolk, whisked
Method
1. Heat oil in a deep pan for deep frying. (CAUTION: Hot oil can be very dangerous. Do not leave unattended.)
2. Mix the spinach, ricotta, parmesan, nutmeg and garlic together.
3. Lay a wonton wrapper on a clean work surface and glaze the edges with the egg yolk, using a pastry brush. Fill with a spoonful of the spinach and cheese mixture and seal the edges to make half moon shape.
4. Deep fry in the oil for 2-3 minutes or until crisp and golden.
5. Serve with Red pepper sauce
