Ingredients
200ml/7fl oz double cream
75g/3oz soft brown sugar
100g/3½oz, noodles, cooked according to packet instructions, drained, chopped
1 piece stem ginger
½ mango, peeled, stone removed, chopped
icing sugar, to serve
Method
1. Preheat oven 180C/350F/Gas 4.
2. Heat the cream and sugar in a saucepan over a medium heat, stirring continuously until the sugar has dissolved (do not allow the mixture to boil). Stir in the remaining ingredients except the icing sugar.
3. Pour the mixture into two ramekins and place the ramekins onto a baking tray. Transfer to the oven and cook for 10-12 minutes, or until until golden and cooked through.
4. To serve, dust with icing sugar.
