Ingredients
25g/1oz butter, plus extra for greasing
2 handfuls spinach leaves
4 free-range eggs
4 tbsp double cream
salt and freshly ground black pepper
Method
1. Preheat the oven to 180C/350F/Gas 4. Grease the insides of two ramekins with butter.
2. Melt the butter in a frying pan and fry the spinach for 1-2 minutes, or until wilted. Divide the wilted spinach between the two ramekins, crack in the eggs and pour over the cream. Season well with salt and freshly ground black pepper.
3. Place the ramekins on a baking tray in the oven and bake for 5-7 minutes, or until the eggs are just set. Serve immediately.
