Ingredients
200g/7oz ready-made Christmas cake
2 free-range egg whites
butter, for greasing
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Crumble the cake into a bowl.
3. In another bowl, whisk the egg whites until stiff peaks form when the whisk is removed.
4. Fold the egg whites into the crumbled cake until well combined.
5. Grease four ramekins with butter and spoon the mixture into the ramekins, smoothing the tops with a palette knife.
6. Place onto a baking sheet and bake in the oven for 8-10 minutes, or until golden-brown and risen. Serve immediately.
