Chocolate sponge pudding

Ingredients

55g/2oz butter, plus extra for greasing
55g/2oz caster sugar
110g/4oz plain flour
2 free-range eggs
40g/1½oz cocoa powder
2 tbsp golden syrup

Method

1. In a food processor blend the butter, sugar, flour, eggs and cocoa powder until smooth.
2. Grease a small round heatproof bowl with butter and drizzle the base with golden syrup.
3. Pour the batter into the bowluntil three quarters full, then cover with the cling film.
4. Place the bowl into the microwave and cook on a high power for four minutes, or until risen and cooked thoroughly.
5. To serve, turn out the pudding onto a plate.
