Ingredients
125ml/4fl oz vegetable oil
115g/4oz self-raising flour
2 free-range eggs
generous pinch chilli flakes
salt and freshly ground black pepper
300ml/½ pint milk
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Pour two tablespoons of vegetable oil into each cup of a Yorkshire pudding or muffin tray and place into the oven to heat for five minutes.
3. Meanwhile, place the flour, eggs, chilli flakes, salt and freshly ground black pepper into a large bowl and whisk together to form a paste.
4. Gradually add the milk, whisking constantly, until the batter is smooth and the consistency of single cream.
5. Carefully remove the hot tray from the oven and pour the batter into the cups of hot oil in the tray to half fill each cup. Immediately return to the oven and cook for 15-18 minutes, or until golden-brown and well risen. Do not open the oven.
6. Remove from the oven, remove the chilli Yorkshires from the tray and serve immediately.
