Ingredients
100g/3½oz lamb steak, trimmed
1 tsp ground mixed spice
pinch chilli powder
2 tbsp grated apple
salt and freshly ground black pepper
30g/1oz butter
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Place the lamb, spices and apple into a food processor and blend to combine. Season with salt and freshly ground black pepper.
3. Using your hands, shape the mixture into two balls.
4. Heat the butter in an ovenproof frying pan and cook the koftas, turning frequently, until browned all over.
5. Transfer to the oven and bake for 6-8 minutes, or until the koftas are completely cooked through.
6. To serve, thread the koftas onto a skewer.
