Spiced lamb with couscous salad - 1

Ingredients

1 lamb chop
pinch chilli powder
pinch cayenne powder
pinch turmeric
salt and freshly ground black pepper
1 tsp olive oil
For the couscous salad
150g/5oz couscous, cooked according to packet instructions
½ red pepper, chopped
½ red onion, chopped
2 tbsp olive oil
1 handful spinach

Method

1. For the spiced lamb, rub the lamb chop with the chilli powder, cayenne pepper, turmeric and season.
2. Preheat a chargrill pan and add the oil. Add the lamb and cook for 4-5 minutes on each side. Remove from the heat and leave to rest for three minutes.
3. For the couscous salad, heat the oil in a pan and add the red onion and pepper. Cook for five minutes. Add the spinach then take off the heat.
4. Place the cooked couscous in a bowl and add the spinach mixture. Mix together.
5. To serve, slice the lamb. Place the couscous into the centre of a plate and top with the sliced lamb.
