Chicken stuffed with mozzarella with sweet pepper fondue sauce

Ingredients

For the chicken
1 chicken breast, small fillet (on underside) removed
2 slices mozzarella
3 large basil leaves
small knob of butter
1 tsp olive oil
1 clove garlic, finely chopped
salt and freshly ground black pepper

For the sauce
1 tbsp olive oil, plus a little extra for drizzling
15g/½oz butter
1 clove garlic, crushed
1 orange pepper, chopped
1 tbsp ketchup
1 tbsp chopped basil
1 tbsp mixed herbs

Method

1. Preheat the oven to 200C/400F/Gas 6.
2. Make a pocket in the chicken breast with a sharp knife and stuff with the mozzarella and basil. Use the smaller fillet to help seal.
3. Heat the butter and oil in a pan and when foaming, add the chicken, pocket-side down first, to brown all over.
4. Add the garlic to the pan and season with salt and freshly ground black pepper. Place into the oven for 15 minutes or until cooked through.
5. For the sauce, heat the oil and butter in a deep pan, then add the garlic and pepper and cook for 3 minutes.
6. Add the ketchup and basil and stir though.
7. When ready to serve place the chicken on a plate, drizzle some oil over the top and garnish with extra herbs.
