Ingredients
8 boneless and skinless chicken thighs
For the marinade:
2 fresh red chillies, finely chopped
4 limes, segmented
100ml/3½fl oz olive oil
1 bunch fresh coriander
6 lime leaves
Maldon sea salt
freshly ground black pepper
Method
1. Mix all the ingredients to make the marinade in a large bowl.
2. Carefully fleck the chicken thigh open with a knife to get a nice flat manageable piece of chicken.
3. Submerge the chicken in the marinade for 2 days.
4. Take the chicken out of the marinade and shake off any excess.
5. Place the griddle pan on the hob and drizzle with olive oil, ensure the pan is hot before placing the chicken in the pan.
6. Place the chicken in the pan and grill for 4-6 minutes.
NB:
You will need a griddle pan for this recipe.
