Grilled chicken in a pineapple

Description

Spicy jerk chicken is served on a halved pineapple filled with a tangy, fruity salad. Serve simply with warm crusty bread for a healthy summer meal.

Ingredients

2 chicken breasts, skin on
1 small jar jerk seasoning
1 large pineapple
1 red pepper, de-seeded
1 small cucumber, peeled and de-seeded
fresh thyme sprigs, leaves removed
olive oil, for basting


For the dressing:
1 passion fruit
pinch of sea salt
pinch freshly ground black pepper
1 tbsp demerara sugar
1 tbsp olive oil
½ lime, juice only

Method

1.To marinate the chicken: score the chicken breasts skin side up and then smother them liberally with the jerk seasoning, making sure you get into the scored cuts as well.
2. Leave to marinate for up to three hours and prepare the pineapple: cut it in half lengthways remove the flesh and reserve.
3. Preheat the grill or barbeque.


4.To prepare the salad:chop the pineapple flesh, the pepper and the cucumber into bite-sized pieces and place in a bowl. Mix in the thyme leaves thoroughly and fill each pineapple half with the salad.
5. To cook the marinated chicken breasts, place them on hot coals or under a hot grill for 5-7 minutes on each side or until cooked through basting occasionally with olive oil.


6. For the dressing:scoop out the pulp of the passion fruit into a bowl. Add the salt, pepper, sugar, olive oil and lime juice. Mix thoroughly.
7. Remove the cooked chicken from the heat and allow them to cool slightly. Slice them on the diagonal into 4-5 pieces and then lay a breast over each pineapple half. Spoon over the passion fruit dressing and serve immediately.
