Ingredients
150g/5oz rocket
10g fresh coriander
½ ripe mango, peeled and thinly sliced
1 breast cooked chicken and/or 200g/7oz cooked prawns
2 fresh figs (optional)
½ red onion
6tbsp/90ml/3fl oz fig balsamic vinegar or balsamic vinegar
Method
1. Lay a bed of rocket and coriander on a serving dish.
2. Scatter over the mango slices, red onion, chicken and prawns.
3. Cut the figs in halves or quarters and place on top.
4. Drizzle with the vinegar, extra virgin olive oil and season with salt and pepper. Serve.
