Ingredients
100ml/3½oz double cream
100ml/3½oz coconut cream
2 tbsp icing sugar
2 free-range eggs
3 slices ready-made brioche
50g/1¾oz unsalted butter
icing sugar to dust


Method
1. In a bowl, whisk together the double cream, coconut cream, icing sugar and eggs.
2. Dip the brioche slices into the mixture to completely coat.
3. Melt the butter in a frying pan over a medium heat. Add the brioche and fry for two minutes on each side, or until golden.
4. To serve, place the brioche slices onto a plate and dust with icing sugar.
