Duck with oyster sauce, greens and crispy noodles - Food - Recipes

Ingredients


2 duck breasts
30ml/1½ - 2 tbsp honey
groundnut or vegetable oil
2 cloves garlic, sliced finely
1cm/½in root ginger, finely chopped
1 green chilli, sliced thinly
3 bunch spring onions, shredded
250g/9oz spring greens, shredded
1 tbsp oyster sauce
1large packet noodles, cooked
1 tbsp soy sauce
1 tbsp sesame seeds, toasted


Method


1. Pan fry the duck, skin side down at first, with the honey and a little oil. Turn the breasts over and reduce the heat to allow them to cook through. Remove, cool and thinly slice.

2. In a hot wok, heat a little oil and stir fry the garlic, ginger, chilli and onion, taking care not to burn them. After a minute or so, add the greens and cook until they are wilted.

3. Then add the oyster sauce, the duck and the noodles and cook for a couple of minutes until everything is heated through. Add a little soy sauce and serve sprinkled with the sesame seeds.
