Ingredients
1 tsp vegetable oil
2 garlic cloves crushed, peeled
2 chicken breasts, skinned and cut into bite-size pieces
8 - 10 macadamia nuts, crushed
¼tsp white pepper
1 green chilli, seeded and finely chopped
1 tbsp lemon juice
2 tbsp sweet soy sauce
pinch salt
Method
1. Have ready 8 10- skewers.
2. Heat the oil in a frying pan, and sauté the garlic. Take a bowl and put into it the chicken, nuts, fried garlic, pepper, chilli, lemon juice, soy sauce and salt.
3. Cover and place in the refrigerator for a couple of hours or overnight.
4. When you are ready to eat, skewer the meat and grill or barbecue it for 10 minutes.
Tips:
If you have no macadamia nuts, use 7 - 8 shelled and skinned peanuts.
No soy sauce? Use 2 tbsp of Worcester sauce and 1 tsp of honey.
