Ingredients
For the crumble
200g/7oz mixed berries
2 tbsp icing sugar, plus extra for dusting
1 ready-made flapjack bar
25g/1oz dark chocolate
25g/1oz walnut halves
For the custard
200ml/7fl oz milk
2 free-range egg yolks
1 tbsp cornflour
2 tbsp icing sugar
Method
1. Preheat the oven to 180C/350F/Gas 4.
2. For the crumble, place the berries and icing sugar in a small oven-proof frying pan and heat until boiling.
3. Place the flapjack, chocolate and walnuts into a food processor and pulse until broken up and combined. Sprinkle the flapjack and chocolate mixture onto the pan of cooked berries. Transfer to the oven to cook for 6-7 minutes, or until the crumble top is golden-brown. Remove from the oven and dust with icing sugar.
4. For the custard, heat the milk in a small pan until nearly boiling.
5. Whisk the egg yolks, cornflour and icing sugar together in a clean bowl.
6. Pour the hot milk onto the egg mixture, whisking constantly.
7. Pour the custard back into the an and heat, stirring, until the custard thickens.
8. To serve, spoon the crumble from the pan onto a serving plate and pour the custard over the top.
