Ingredients
16 florets purple sprouting broccoli, steamed
For the dressing
200g/7oz daikon, peeled and grated
½ lemon, juice only
1-2 tbsp sugar
3 tbsp light soy sauce
2 tbsp rice vinegar
2 tsp sesame seeds, toasted and lightly ground
For the garnish
spring onion, finely chopped
sesame seeds, toasted
Method
1. Mix all the dressing ingredients together in a jar, put the lid on and shake vigorously to blend. The dressing will keep for several days refrigerated.
4. Dress the broccoli with the daikon dressing.
5. Serve with Oven-baked sweet miso-marinated salmon on a bed of soba noodles and garnished with chopped spring onions and sesame seeds.
