Tomato, shiitake mushroom and coriander noodle stir-fry

Ingredients

1 tbsp vegetable oil
½ onion, finely sliced
1 garlic clove, chopped
4 shiitake mushrooms, sliced
4 cherry tomatoes, halved
200g/7oz fine egg noodles, cooked
1 tbsp sesame oil
2 tbsp soy sauce
2 tbsp chopped fresh coriander
1 tbsp chopped fresh chives
2 tbsp sesame seeds, toasted, to serve

Method

1. Heat the oil in a wok, add the onions and fry for four minutes. Add the garlic and sliced mushrooms and stir fry for 2-3 minutes.
2. Add the tomatoes, cooked noodles, sesame oil, soy sauce, coriander and chives, and stir fry for one minute.
3. To serve, spoon into a bowl and garnish with toasted sesame seeds.
